Sausage & Blue Cheese Bagel

Ingredients:

2 pork sausages

1/2 sliced white onion

2 tbsp blue cheese

1 bagel

salt & pepper


How to:

  • Heat a frying pan on medium-high heat with a drizzle of oil. Fry off the sausages for a few minutes on each side until they're a caramelised golden brown. Place the sausages into an oven proof dish and finish in the oven at 180 for 15 minutes.

  • Whilst the sausages are cooking in the oven, turn the heat to medium and fry off the onions in the frying pan to saute in the fat and juices from the sausages. Season the onions with salt and pepper.

  • Toast the bagel and spread blue cheese on both halves and place the sauteed onions on the bottom half.

  • Slice the sausages and place on the onions, sprinkle some dried thyme to finish.

  • Close the bagel with the top half, slice in the middle and enjoy!



This is probably my partners favourite breakfast dish and as a result, has become a staple recipe in our house over the last few years.


Depending on what I have in the fridge is dependant on the type of Blue cheese I use for this recipe. In the picture shown at the top of the page I used the Saint Agur blue cheese creme spread which is incredible, it's cheesy, creamy and perfect for a recipe like this. However not all shops sell the creme so using regular blue cheese and spreading it over the bagel as stated in the recipe, is just as good. (But try the creme version too, you won't regret it!)
