South East Asian Style Corn Fritters

Ingredients:

  • 100g plain flour

  • ½ tsp baking powder

  • 1 egg

  • 3-4 tbsp milk

  • 150g canned sweetcorn 

  • 2 spring onions

  • 1 red chilli

  • generous handful of fresh coriander 

  • 2cm piece grated ginger

  • salt & pepper

  • 2 tbsp vegetable oil


How to:

  • Sieve the flour and baking powder into a bowl to remove any lumps in the flour. Add the egg and milk and whisk until combined, it should look like a smooth pancake like mixture.

  • Add the sweetcorn into the bowl with the mixture, finely slice the spring onions and red chilli and add to the bowl along with the grated ginger and chopped coriander. Season with salt & pepper.

  • Heat up a frying pan on medium heat and add 1 tbsp of oil, once hot add in a tbsp of mix to make each fritter. Make sure you space them around the pan so they’re not touching. (I recommend doing in 2 batches)

  • The fritters will take about 3 minutes to cook on each side, flip halfway through to get that golden brown colour on both sides.

  • Once cooked remove the fritters from the pan and lightly season with salt on both sides.


A classic American snack with a South-East Asian twist. If you’re a fan of corn fritters then this recipe will be a new favourite. These can be used for light lunch or can be used as a side dish for your fake away Friday!

This recipe is so easy to swap for substitutions. I know there’s a lot of people out there who aren’t a fan of sweetcorn so if that’s you then you can easily use shredded carrots or even peas in replace of the sweetcorn.


FRITTER TIP: when frying your fritters use about a tablespoon of mixture for each fritter and try to make sure it's flat whilst cooking. When cooking the sweetcorn will sink to the bottom of the mixture causing the fritters to cook unevenly so trying to make sure the fritters are flat is a good tip to keep in mind.
