Summer Halloumi Kebabs

Ingredients:
200g halloumi cheese
1 courgette
1 yellow pepper
1 red pepper
1 tsp ground cumin
large handful of fresh parsley
1 crushed garlic cloves
½ lemon
salt & pepper
extra virgin olive oil
How to:
Preheat your oven to 200°C. Slice the courgette into ½ cm thick slices, with the bell pepper cut into rough shapes about the same size as the courgettes.
Lay your vegetables out in a flat layer on a baking tray and season with ground cumin, salt, pepper and coat in about 1 tbsp of olive oil. Bake in the oven for 15 minutes.
Chop the Halloumi into square chunks, these will need to be a little thicker than the vegetables to prevent the halloumi from falling apart when it cooks. Once sliced, fry in a hot grill pan on low-medium heat for no longer than 3 minutes on each side and they should be golden brown.
Chop the Parsley until fine and add into a bowl, add the garlic, lemon juice and zest , salt and pepper. Drizzle in the oil, you’ll need about 4-5 tbsp. This is your dressing.
Once the vegetables are out of the oven you can start layering up your skewers. Once assembled, brush the parsley oil across the kebabs. (If you’re not using a BBQ then these are ready to eat.)
If you’re using a BBQ then quickly place them on for about a minute on each side to give them the char marks and a smoky flavour. Once taken off the grill, top with more dressing before serving.

The vegetables used can be substituted to whatever you prefer, aubergines are a delicious substitution along with cherry tomatoes.
